中文摘要: 三甲胺(trimethylamine,TMA)是衡量水产动物及其制品和肉与肉制品中腐败程度的重要指标,对TMA含量进行有效监控,建立准确、灵敏和值得信赖的检测方法是当前产业界亟需解决的问题。近年来很多研究者尝试从各个角度来分析肉制品中三甲胺,包括形成因素、转化途径、代谢方式、致毒机理、检测方法等。首先对三甲胺进行介绍,其次归纳三甲胺与人体健康联系,着重分析并总结21世纪以来检测三甲胺的各类方法,包括顶空气相色谱法、顶空气相色谱-质谱联用法、离子迁移谱法、离子色谱法、传感器法、毛细管电泳法等方法并对其进行概述,最后对发展方向进行展望。

Abstract:Trimethylamine(TMA)is an important indicator to measure the degree of putrification in aquatic animals including their products and meat products.Effective monitoring of TMA and establishment of accurate,sensitive and reliable detection methods are the most important problems to be solved in food industry.In recent years,many researchers have tried to analyze trimethylamine in meat products from various angles,including factors of formation,pathways of transformation,metabolic ways,mechanism of toxicity,detection methods and so on.Trimethylamine was firstly introduced,then summarized the relationship between trimethylamine and human health,various methods for the detection of trimethylamine since the 21st century were analyzed and summarized emphatically,including headspace gas chromatography spectrometry,gas chromatography-mass spectrography,ion mobility spectroscopy,ion chromatography,sensor methods,capillary electrophores and so on.Finally the development direction was prospected.
