青稞的营养价值和功效作用研究现状

中文摘要: 青稞是一种广泛种植于我国西南、西北地区的谷物。随着青稞潜在营养价值的逐步发现,这种古老的粮食作物逐渐成为研究热点,并由一个区域性口粮作物向全国性的健康食物资源发展。研究发现,青稞由于含有β-葡聚糖、多酚等功能活性物质,具有降血糖、降血脂、改善代谢综合征等健康潜力。由于不同的加工方式会对其成分的含量和结构产生显著影响,从而改变青稞的功能特性,因此,在以青稞为原料的产品开发过程中应充分予以考察。主要概述青稞的营养价值、功效作用,并对其研究前景进行展望,旨在为青稞的综合利用提供理论基础。

Abstract:Highland barley is widely planted in Southwest and Northwest China.With the gradual discovery of potential nutritional value of highland barley,this ancient food crop is recognized as a research hotspot,and is developed from a regional ration crop to a national healthy food resource.It was discovered that highland barley owning the potential of lowering blood sugar,reducing blood lipid and improving metabolic syndrome due to the functional active substances such as β-glucan and polyphenols.It was discovered that different processing methods would have a significant impact on the content and structure of the components,thus changing the functional characteristics of highland barley,therefore,it should be fully investigated during the product development progress using highland barley as a raw material.The purpose of this paper was to summarize the function of highland barley,and to provide theoretical basis for the comprehensive utilization of highland barley.
