中文摘要: 山药多糖是从山药中提取、纯化得到的一类多糖化合物,是山药的主要活性成分之一,广泛应用于药品、食品以及保健品中。目前研究发现,山药多糖具有抗疲劳力、调节免疫力、抗衰老、改善性功能、降血糖、降血脂、抗氧化、保肝、抗癌、神经保护、预防老年痴呆、抗菌、调节肠道菌群、抗应激等多种功能活性。此外,山药多糖的深加工应用主要集中在免疫调节剂、肠道微生态调节剂、保肝剂、补铁剂、烟草添加剂、抗氧化剂、保鲜剂、乳化剂等多个领域。该文对山药多糖的功能活性及新产品现状进行综述,并对目前山药多糖研究的局限性进行分析,以期为进一步开发利用提供参考。

Abstract:Chinese yam polysaccharide,a kind of polysaccharide compounds extracted and purified from Chinese yam,is one of the major active components of Chinese yam and widely used in medicine,food and health products.At present,it was found that Chinese yam polysaccharide had many pharmacological activities,including anti-fatigue,regulating immunity,anti-aging,improving sexual function,lowering blood sugar,reducing blood fat,anti-oxidation,protecting liver,anti-cancer,nerve protection,preventing Alzheimer's syndrome,anti-bacterial,regulating intestinal flora,anti-stress and so on.In addition,the application of deep-processed yam polysaccharide were mainly concentrated in the fields of immunomodulator,intestinal microecological modulator,liver protecting agent,iron supplement,tobacco additive,antioxidant,preservative,emulsifier,etc.This paper reviewed the functional activity and new product status of Chinese yam polysaccharide and analyzed the limitations of current research,providing reference for further development and utilization.
