中文摘要: 通过比较不同学者对乌鳢肌肉中常规营养成分、必需氨基酸、多不饱和脂肪酸、矿物质的检测结果,并对比其他淡水经济鱼类的营养组成,对乌鳢肌肉的营养价值进行评价。指出存在的3个主要问题:一是亟待开展乌鳢肌肉中维生素的组成与含量研究;二是优化乌鳢肌肉中脂肪酸以及矿物质的检测方法;三是深入开展乌鳢的高值化加工与综合利用技术研究。

Abstract:By comparing the results of different scholars'testing of routine nutrients indexes,essential amino acids,polyunsaturated fatty acids,and minerals in the muscle of Channa argus,and comparing the nutritional composition of other freshwater economic fish,the nutritional value of Channa argus muscle was evaluated.It pointed out that there were three main problems:first,it was urgent to analyze the composition and content of vitamins in the muscle of Channa argus;second,it was to optimize the detection method of fatty acids and minerals in the muscle of Channa argus;the third,it was to carry out in-depth research on the high-value processing and comprehensive utilization of Channa argus.
