Abstract:By comparing the results of different scholars'testing of routine nutrients indexes，essential amino acids，polyunsaturated fatty acids，and minerals in the muscle of Channa argus，and comparing the nutritional composition of other freshwater economic fish，the nutritional value of Channa argus muscle was evaluated.It pointed out that there were three main problems：first，it was urgent to analyze the composition and content of vitamins in the muscle of Channa argus；second，it was to optimize the detection method of fatty acids and minerals in the muscle of Channa argus；the third，it was to carry out in-depth research on the high-value processing and comprehensive utilization of Channa argus.
