中文摘要: 大豆含有36%~56%的蛋白质,是最丰富的植物蛋白质来源之一,是生物活性肽的良好来源,因此成为研究功能性食品和新药物的研究对象。生物解离大豆蛋白水解物和肽具有较高的营养价值和优异的功能特性,有降压、降胆固醇、抗氧化和抗癌活性等生物学特性。该文综述生物解离大豆蛋白及肽的生产和生物功能特性,为大豆蛋白、肽的生产工艺、标准建立、功能开发及作用机制研究提供参考。
Abstract:Soybean is one of the most important crops and abundant plant sources of dietary protein.Soybean contains about 36%-56%protein,which makes it a good source of bioactive peptides and object of functional food and new drugs research.Hydrolysates and peptides derived from soybean by enzymatic hydrolysis have shown a good nutritional value and potential health benefits such as antihypertensive,cholesterol-lowering,antioxidant and anticancer activities.It was reviewed in this article that the recent research advances in biological activity of extracts derived from soybean protein by enzymatic hydrolysis.Biological and functional characteristics of the derived extracts were also presented.It was provided by this article that the important information and knowledge for development and industrial production of soybean protein-derived hydrolysates and peptides with potential health benefits.
