Abstract:Soluble soybean polysaccharides are acidic polysaccharides found in soybeans which has antioxidation，anti-bacterial and anti-tumor biological activities，and is used in food and medicine.A simple general comparison was made of the extraction，separation and purification，structural analysis and application of soybean polysaccharide，in order to provide references for the subsequent analysis and practical application of soybean polysaccharide structure.
