皇冠梨香气成分气相色谱-质谱联用分析

中文摘要: 采用顶空固相微萃取(headspace solid phase microextraction,HS-SPME)和气相色谱与质谱联用技术(gas chromatography with mass spectrometry,GC-MS)分析皇冠梨中梨皮、梨肉、梨汁中的香气成分。结果表明:共鉴定出香气成分56 种,3 个样品中均含有酯类物质,其中果皮中最多,果肉居中,果汁最少,分别占香气物质的27.21%、9.63%、0.19%。除此之外还含有正己醛、反式-2-己烯醛、壬醛,且总量分别占果肉样及果汁样中香气物质的4.50%、52.20%,甲基庚烯酮占果皮样及果肉样中香气物质的0.42%、1.48%。其中反式-2-己烯醛具有新鲜的绿叶香味;甲基庚烯酮具有水果香气和新鲜清香香气;壬醛具有玫瑰、柑橘等香气、青味、油脂味;癸醛稀薄时具有果味香,使得皇冠梨具备了独特的怡人风味。此外,皇冠梨果皮中香气成分较为丰富,共检测出33 种,其中特有成分14 余种,因此,建议在加工皇冠梨果汁、果脯、罐头等产品时,尽量保留果皮,以保留产品独特香气。皇冠梨肉样中检测出香气成分16 种,皇冠梨汁样中检测出的香气成分18 种,其中特有成分共近21 种,适宜加工生产果汁、罐头产品。
Abstract:Using headspace solid phase microegxtraction (HS-SPME)and gas chromatography with mass spectrometry(GC-MS)to analyse huangguan pear including pear skin,pear and pear juice what fragrance they have.The result of an experiment showed that:by authenticate,it had 56 kind of fragrances in the huangguan pear,and three specimen had ester.In the ingredient for fragrances of pear,the largest proportion was pear skin(27.21%)and the second largest proportion was pear(9.63%),however there was only a small percentage of pear juice(0.19%).During the same period it also had some organic compound such as caproaldehyde,trans-2-Hexena,Nonanal which amounts to respectively account for pear and pear juice with 4.50%and 52.20%.6-methyl-5-hepten-2-one make up 0.42% and 1.48 % of the pear skin and pear.The Trans-2-Hexenal smelt like fresh greenery.6-Methyl-5-hepten-2-one had fruit of fragrance and fresh scent.And the Nonanal smelt like rose ,citrus and grease,at the same time when the Decanal became thin it will emit fruit of fragrance.And that all maked huangguan pear had unique fascinating flavour.In addition ,there were various ingredient of fragrances in the huangguan pear,with had 33 kind of fragrances and had more than 14 special components.Therefore,suggestions in processing huangguan pear juice,preserved fruit,canned and other products,keep the pear skin as far as possible,this can keeped the product unique fragrances.The pear of huangguan pear specimens detected in 16 kinds of fragrances components,huangguan pear juice samples detected in 18 kinds of aroma components,including nearly 21 kinds of endemic components,thus suitable for processing and production of fruit juice and canned products.
