中文摘要: 旨在研究不同干燥方式对佛手片抗氧化活性、维生素C(VC)、维生素E(VE)及黄酮含量的影响,为工业佛手片的干制提供理论依据。选用热风干燥、微波干燥、冷冻干燥3种干燥方式干制佛手片,测定干制的佛手片抗氧化活性、VC、VE 及黄酮含量,对比水溶液和醇溶液提取干制佛手片中黄酮含量。结果表明,乙醇溶液提取干制佛手片的黄酮总量远高于水溶液提取,为(19.63±0.22)mg/100 g;3种干燥方式干制的佛手片对超氧阴离子清除率具有显著差异,依次为冷冻干燥(91.76%)〉微波干燥(85.89%)〉热风干燥(84.79%),羟自由基清除率依次为:冷冻干燥(88.39%)〉热风干燥(78.40%)〉微波干燥(77.12%);冷冻干燥佛手片 VC、VE 的含量显著(p〈0.05)高于热风干燥和微波干燥:黄酮含量依次为:冷冻干燥〉热风干燥〉微波干燥。通过分析,冷冻干燥干制佛手片效果最佳,其次是热风干燥,最后是微波干燥。
Abstract:The aim was to study the effect of different drying methods on the Citrus medica piece's antioxidant activity and the content of vitamin C,vitamin E and flavone.the results couold provide theoretical evident for industrial drying methods.Hot air drying,microwave drying and freeze drying were used in this study.The antioxidant activity and the content of vitamin C,vitamin E and flavone were measured and flavone extracted methods,water extraction and alcoholic extraction,were compared.The results showed that the total amount of flavonoid extracted by alcohol,which was(19.63±0.22)mg/100 g,was higher than that extracted by water.There were significant differences in the ability of removing superoxide anion among the three drying methods,the order was freeze drying(91.76)〉microwave drying(85.89%)〉hot air drying(84.79%).The order of hydroxyl radical scavenging ability was freeze drying(88.39%)〉 hot air drying(78.40%)〉 microwave drying(77.12%).The content of VC and VE that drying method was freeze drying was significant higher than that dried by hot air drying and microwave drying(p〈0.05).The order of flavone content was freeze drying〉 hot air drying〉microwave drying.The conclusion freeze drying was better than hot air drying and microwave dry freeze drying could be drawn.
