Abstract:Jinhua fungus is one of the most important quality indicators to Fu brick tea.Based on the national standard，the single factor test and response surface analysis method were used to optimize the counting method of the total number of Jinhua fungus in Fu brick tea.The results showed that the optimal conditions for sample pretreatment were as follows：the mesh size was 80 mesh，the sterile diluent was 0.85%NaCl solution，and the shaking time was 50 min.Under this condition，the total number of colonies of“Jinhua fungus”was（50.75±1.1）×105CFU/g.The total number of colonies of Jinhua fungus obtained by the optimization method was about 5 times that of the national standard method.
