无硫复合护色剂抑制冷藏桃的冷害作用功效研究

中文摘要: 为探讨无硫复合护色剂减轻冷害的效果,以水蜜桃为试材,分别以非处理桃和1-甲基环丙烯(1-methylcyclopropene,1-MCP)处理桃为阴性对照和阳性对照,研究无硫复合护色剂处理对冷藏期间桃果实生理生化指标的影响。结果表明:与非处理对照组相比,无硫复合护色剂处理下冷藏桃果实的腐烂率、褐变指数、呼吸速率、乙烯释放量、相对导电率、多聚半乳糖醛酸酶(polygalacturonase,PG)、纤维素酶(cellulases,CX)活性均被显著降低,而果实硬度、可滴定酸和可溶性固形物水平被显著提高。从一些指标分析来看,无硫复合护色剂对桃冷害作用的减弱和果实品质的维持作用效果甚至要优于1-MCP。试验表明处理无硫复合护色剂可通过调节呼吸强度、减低乙烯释放量,维持果实细胞壁的完整性,有利于减轻桃果实冷害的发生并延长贮藏期。
Abstract:To evaluate the effect of sulfur-free complexed color-protecting agent against cold injury,using honey peach as experiment materials,and using untreated honey peach and 1-methylcyclopropene(1-MCP)treated honey peach as negative and positive controls,the effect of sulfur-free complexed color-protecting agent on physiology-biochemical indexs in peaches during cold storage was investigated.Results showed that,compared with untreated control,decay rate,browning index,respiratory rate,ethylene releasing rate,relative conductivity,polygalacturonase(PG)and cellulases(CX)activities in sulfur-free complexed color-protecting agent treated peaches were significantly reduced,while hardness,titratable acidity and soluble solids contents were significantly increased.From some tested indexs,the inhibiting effect of sulfur-free complexed colorprotecting agent against cold injury was even better than 1-MCP.Results indicated that sulfur-free complexed color-protecting agent preserved the integrity of the cell wall of the fruits by regulating respiratory rate and de-creasing ethylene releasing rate.These were useful to alleviate peaches cold injury and prolong storage.
