中文摘要: 对南康甜柚采后常温贮藏期间主要营养成分及品质变化进行了研究。随着南康甜柚贮藏时间的延长,总糖、可溶性固形物含量先上升再下降,总酸含量呈波动性变化,糖酸比明显增加,维生素C含量持续下降,钙、磷含量基本保持不变,可溶性蛋白质含量前40天呈增加趋势,40 d~80 d较为平稳,90天之后呈单边下降趋势。综合考虑南康甜柚在贮藏期间营养成分和品质的变化,得出南康甜柚在贮藏40 d左右时,营养成分和品质较佳。

Abstract:The changes of main nutritional components and quality of Nankang sweet pomelo after harvest were studied during storage at normal temperature.As the storage getting longer,the content of total sugar and soluble solids first increased and then decreased.The fluctuated changes of the total acid content were shown.The sugar-acid ratio increased significantly,but the vitamin C content decreased continuously,and the content of calcium and phosphorus remained substantially unchanged.Meanwhile,the soluble protein content showed an increasing trend in the first 40 days,stable in 40 to 80 days,and showed a unilateral downward trend after 90 days.When the nutritional composition and quality of Nankang sweet pomelo during storage were comprehensively considered,the results showed that the nutritional components and quality of Nankang sweet pomelo are better when stored for about 40 days.
