Abstract:The drying experiment of Yangchun long yam was carried out by heat pump drying technique.The blanching treatment，slice thickness and drying temperature were used as experimental variables.After drying yam quality analysis，to determine the optimum process parameters：Fresh material slices directly soaked in water without blanching treatment，slice thickness 6 mm，heat pump drying temperature of 60℃，dry 3 to 4 hours.That can getting a better Yangchun long yam dry products.
