中文摘要: 为了研究保鲜纸箱对樱桃常温贮藏保鲜效果的影响,采用两种保鲜纸箱(MS1和MS2),另一种普通纸箱(CK)作为对照组,测定在室温条件(15℃~23℃)下,3种纸箱包装内樱桃腐烂率、失重率、果实硬度、可溶性固形物、可滴定酸和维生素C含量等各项理化品质指标的变化。试验结果表明在常温下普通纸箱内樱桃的货架期为6 d,而保鲜纸箱内可以达到9 d。常温贮藏9 d后,MS2试验组对樱桃保鲜效果最佳,其腐烂率、失重率分别为11.1%和8.9%,果实硬度保持在1.36 kg/cm2,可溶性固形物、可滴定酸的质量分数分别为11.33%和0.21%,维生素C含量为10.97 mg/100 g。

Abstract:The work aims to study the preservation effect of different packaging cartons on cherry at room temperature(15℃-23℃).Two kinds of preservation cartons(MS1 and MS2)were used in this experiment,and another common carton(CK)used as the control group.The changes of physical and chemical quality indexes were determined periodically during storage time.And the results showed that shelf life of cherry in preservation carton could extend from 6 days to 9 days in comparison with common carton,and the quality of cherry in MS2 group was the best after 9 days stored at room temperature.The rotting rate and weight loss ratio were 11.1%and 8.9%respectively;the fruit firmness remained at 1.36 kg/cm2;total soluble solid and titratable acid content were 11.33%and 0.21%respectively;and 10.97 mg vitamin C was contained in 100 g cherry juice.
