中文摘要: 扣囊复膜酵母属于酵母菌的一种,又称扣囊复膜孢酵母,扣囊拟内孢霉。大量研究发现扣囊复膜酵母广泛存在于各种酒曲中,能产淀粉酶,酸性蛋白酶,β-葡萄糖苷酶,且其所产的酶都具有较高的活性;除此之外,不少研究发现扣囊复膜酵母还具有一定的产香产酯以及可利用丢糟生产单细胞蛋白饲料的能力。在酿酒工业中,这些酶活性决定了扣囊复膜酵母能够以各种原料为底物,进行发酵产酒精;其产香产酯能力又在不同程度条件下增加酒的香气,丰富了酒的风味,又可利用丢糟生产蛋白饲料能力,开辟了白酒酒糟的处理及利用途径。这些决定了扣囊复膜酵母在酿酒工业中有极大的研究价值和发展潜力,因而备受关注。综述扣囊复膜酵母的生理生化特性,菌种的选育,产酶、产香产酯特性,以及在处理丢糟方面的一些应用,以期为扣囊复膜酵母在酿酒工业上的合理利用,提供新的思路和方法。
Abstract:Saccharomycopsis fibuligera belongs to yeast,also known as sac buckle Saccharomycopsis,endomycopsis fibuligera;widely exists in all kinds of yeast,can produce amylase,acid protease in the fermentation industry,beta glucosidase,and its production of enzyme had high activity,in addition the study found that,a lot of Saccharomycopsis fibuligera also has certain aroma producing ester production as well as the use of distiller's ability to produce high quality and low cost of grains of single cell protein feed.In the wine industry in the activity of these enzymes determines Saccharomycopsis fibuligera by all kinds of raw materials as substrates,fermentation of alcohol;the aroma producing ability and increase alcohol ester production in different degree under the condition of aroma,rich flavor of wine.At the same time and it can use distiller's grain production of protein feed,the ability to determine Saccharomycopsis fibuligera has research value and great potential in the brewing industry,this paper summarizes the physiological and biochemical characteristics of Saccharomycopsis fibuligera,strain breeding,application of enzyme producing and aroma producing characteristics and yield of ester producing lees protein feed,provide new ideas and methods for the rational use of Saccharomycopsis fibuligera in the brewing industry.
