中文摘要: 以食用油为材料,采用固相微萃取、气相色谱-质谱联用仪和50/30 umDVB/CAR/PDMS纤维头测定其中的挥发性物质。结果表明:从被鉴定的7种食用油中确定293种挥发性物质,包括醛类、醇类、酯类、烷类、酮类、腈类等物质。其中,醛、醇、酯类挥发性物质种类较多,醛类49种,醇类29种,酯类29种。醛类物质的百分含量最大,为30%。被鉴定的各食用油香味组成成分类似,其中醛类化合物在各种食用油中均大量存在。
Abstract:The edible oils were used as material in this study,and volatile compounds in edible oils were determinated by using solid phase microextraction,gas chromatography-mass spectrometry and 50/30 μm DVB/CAR/PDMS fiber heads.The results showed that 293 kinds of volatile compouds,including aldehydes,alcohols,esters,alkanes,ketones,nitriles and other volatile substance were identified from 7 kinds of edible oil.Among them,it is found that the aldehydes,alcohols and esters were the main of volatile compounds.There are 49 aldehydes,29 alcohols and 29 esters in the volatile compounds.The percentage of aldehydes,accounting for 30%,was the largest of total amount of volatile compounds.The ingredients of the edible oils were similar,in which aldehydeswere abundant.
