中文摘要: 花青素是水溶性天然色素,具有重要的营养价值和药用价值,在食品、化妆品、医药等行业有着巨大的潜力。综述花青素的溶剂浸提法和辅助提取法等提取方法,膜分离法、柱层析法、高效液相色谱法和高速逆流色谱法等纯化方法,总结各种方法的优势和不足,为花青素的产业化开发和深入研究提供参考。

Abstract:Anthocyanins which are water-soluble natural colorants and possess significant nutritional and pharmaceutical values,have great potential in food,cosmetics and medicine industries.The extraction methods,such as solvent extraction and the assisted extraction,and the purification methods,such as membrane separation,column chromatograph,high performance liquid chromatograph and high speed counter current chromatograph were reviewed.The advantages and disadvantages of various methods were summarized.The paper provided a reference for industrial development and further study of anthocyanins.
