中文摘要: 试验采用气相色谱-质谱法(GC-MS)分别对散养藏鸡蛋(JD1)、林芝规模化饲养的藏鸡蛋(JD2)、拉萨规模化饲养的藏鸡蛋(JD3)和市售普通鸡蛋(JD4)蛋黄中脂肪酸组成进行分析,并对其营养价值进行评价。结果表明:JD1、JD2、JD3和JD4这4种鸡蛋蛋黄均检测到6种饱和脂肪酸,分别占总脂肪酸含量的38.79%、39.32%、39.11%和40.05%;单不饱和脂肪酸JD1检测到3种占总脂肪酸含量的33.90%、JD2检测到5种占总脂肪酸含量的34.00%、JD3检测到4种占总脂肪酸含量的29.96%和JD4检测到3种占总脂肪酸含量的39.19%;JD1、JD2、JD3中共检测到多不饱和脂肪酸10种,分别占总脂肪酸的24.19%、24.63%和29.23%;JD4中共检测到多不饱和脂肪酸8种,占总脂肪酸的19.60%。

Abstract:Composition and contents of fatty acids in JD1,JD2,JD3 and JD4were analyzed by GC-MS and their nutrition values were evaluated in this study.Six kinds of saturated fatty acids(38.79%,39.32%,39.11%and 40.05%)were detected in JD1,JD2,JD3 and JD4.Three kinds of mono-unsaturated fatty acids(33.90%)were detected in JD1,five kinds of mono-unsaturated fatty acids(34.00%)were detected in JD2,four kinds of monounsaturated fatty acids were detected in JD3(29.96%),three kinds of mono-unsaturated fatty acids(39.19%)were detected in JD4.Ten kinds of polyunsaturated fatty acids(24.19%,24.63%and 29.23%)were detected in JD1,JD2,JD3,eight kinds of polyunsaturated fatty acids(19.60%)were detected in JD4.
