中文摘要: 试验采用气相色谱-质谱法（GC-MS）分别对散养藏鸡蛋（JD1）、林芝规模化饲养的藏鸡蛋（JD2）、拉萨规模化饲养的藏鸡蛋（JD3）和市售普通鸡蛋（JD4）蛋黄中脂肪酸组成进行分析，并对其营养价值进行评价。结果表明：JD1、JD2、JD3和JD4这4种鸡蛋蛋黄均检测到6种饱和脂肪酸，分别占总脂肪酸含量的38.79%、39.32%、39.11%和40.05%；单不饱和脂肪酸JD1检测到3种占总脂肪酸含量的33.90%、JD2检测到5种占总脂肪酸含量的34.00%、JD3检测到4种占总脂肪酸含量的29.96%和JD4检测到3种占总脂肪酸含量的39.19%；JD1、JD2、JD3中共检测到多不饱和脂肪酸10种，分别占总脂肪酸的24.19%、24.63%和29.23%；JD4中共检测到多不饱和脂肪酸8种，占总脂肪酸的19.60%。
Abstract:Composition and contents of fatty acids in JD1，JD2，JD3 and JD4were analyzed by GC-MS and their nutrition values were evaluated in this study.Six kinds of saturated fatty acids（38.79%，39.32%，39.11%and 40.05%）were detected in JD1，JD2，JD3 and JD4.Three kinds of mono-unsaturated fatty acids（33.90%）were detected in JD1，five kinds of mono-unsaturated fatty acids（34.00%）were detected in JD2，four kinds of monounsaturated fatty acids were detected in JD3（29.96%），three kinds of mono-unsaturated fatty acids（39.19%）were detected in JD4.Ten kinds of polyunsaturated fatty acids（24.19%，24.63%and 29.23%）were detected in JD1，JD2，JD3，eight kinds of polyunsaturated fatty acids（19.60%）were detected in JD4.
