中文摘要: 酶制剂在植物油脂和蛋白质的提取中发挥着越来越重要的作用,由于酶作用于底物时的特异性,选择合适的酶制剂尤为重要。根据目前酶制剂在植物油脂和蛋白提取方面的研究,总结多种酶制剂在不同原料中的作用效果,为合理选择酶制剂提供依据。
Abstract:Enzyme preparation plays a key role in the extraction of vegetable oils and protein.For the specificity of the enzyme,it is really important to select suitable enzyme preparation.Based on the current study of enzyme preparation in vegetable oil and protein extraction,the effect of various enzymes in different raw materials were summarized,and the basis for reasonable selection of enzyme preparation was provided.
