中文摘要: 以润肠通便复方植物提取物为基础,研制通便复方果味饮料。分析蔓越莓果汁粉、蓝莓果汁粉、橘子果汁粉、 罗汉果提取物的添加量对产品感官质量的影响。在单因素的基础上,以感官评分为指标,进行三因素三水平的响应面 优化试验,得到最佳的配比条件为(质量比):蔓越莓果汁粉添加量 18 %、蓝莓果汁粉添加量 5 %、罗汉果提取物添加 量 0.12 %,橘子果汁粉 6 %,为润肠通便功能性饮料的开发提供理论基础。
Abstract:A compound fruit beverage was based on laxative plant extracts. Analysis of cranberry juice powder, blueberry fruit powder, orange fruit powder, extracts of siraitiagrosvenorii adding quantity on sensory quality of products. Based on single factor tests, three factors three levels experiment by response surface optimization was carried out, the results showed that optimum conditions (proportion by weight): cranberry juice powder 18 %, blueberry fruit powder 5 %, extracts of siraitiagrosvenorii 0.12 %, orange juice powder 6 %. The results provid- ed a theoretical for the development of the laxative functional beverage.
