中文摘要: 试验选用大鼠作为模型,研究谷氨酸钠对大鼠的铁代谢指标的影响。试验大鼠 30 只分为 3 个试验组:对照 组、FeSO4 组和 FeSO4-谷氨酸钠试验组(日粮中添加 1 %味精)。试验结果显示:1)日粮中添加味精的缺铁大鼠补铁后,大鼠体重有所增加(P > 0.05)。2)日粮中添加味精的缺铁大鼠灌胃补铁后,贫血大鼠血清铁和铁蛋白均恢复到正常水 平,和对照组相比显著增高(P<0.05);和 FeSO4 相比,FeSO4-味精组血红蛋白含量增加了 3.97 %(P<0.05)。结果显示味 精不但不影响动物对铁的吸收,还有一定的促进铁吸收作用。

Abstract:The rats had chosed as a model for the test which studied the influence of iron metabolism index. 30 experimental rats were divided into three groups: control group, FeSO4 group and FeSO4- sodium glutamate group (adding 1 % sodium glutamate to iron deficiency rats diets ). The results showed that the rats weight in- crease of adding sodium glutamate group (P > 0.05),while anemia rats serum iron and ferritin were restored to normal levels after supply iron by received gavage. Compared to the control group which increased significantly (P<0.05), the content of hemoglobin in the FeSO4- sodium glutamate group was increased by 3.97 %(P<0.05) compared to FeSO4 group. The results showed that MSG not only did not affect the absorption of iron, but also promoted iron absorption in animals.
