中文摘要: 设计一种以复合甜味剂为主要甜味剂的运动饮品,并在饮品配方中添加少量蔗糖作为能量补充。首先设计 5 种不同复合甜味剂和蔗糖含量组合配方,通过感官评价试验、大鼠运动后血糖水平分析、人体运动效果和运动后血糖 水平分析,证实 2 号饮品配方(100 mL 体积,1.8 g 复合甜味剂,0.5 g 蔗糖)感官评价最高,对大鼠和人体运动后血糖影 响最轻微。2 号饮品配方是最佳的运动饮品配方,适合深入研究开发。

Abstract:In this study, the healthy drink as the main sweetener, and added a small amount of sucrose as ener- gy supplement in the beverage formula. First, five different health sugar and sucrose content combination for- mula were designed, through sensory evaluation test, rat blood glucose levels after exercise analysis, human exercise effect and blood glucose levels after exercise analysis, the results showed that the formula of the No.2 drink(100 mL volume, 1.8 g health sugar, 0.5 g sucrose) had the highest sensory evaluation, and the slightest impact on the rats and human after exercise. No.2 sport drink was the best recipe for further research and devel- opment.
