中文摘要: 同位素比质谱技术在很多领域已有广泛的应用,尤其是食品质量真伪鉴别方面,国际上已经取得了一系列研 究成果。综述同位素比质谱技术在葡萄酒、蜂蜜、肉类、植物油、果汁及调味品等各类食品掺假鉴别及原材料的产地溯源 等方面的应用,以期为管理部门的监管、生产厂家的质量控制提供参考。

Abstract:Isotope ratio mass spectrometry has been widely used in many fields,especially in the field of food quality,which has achieved a series of research results in the world.The application of isotope ratio mass spec- trometry was reviewed in identifing the authenticity and traceability of raw materials of various kinds of foods (such as wine,honey,meat, vegetable oil,fruit juice and flavouring,etc.) with the purpose of providing theoret- ical basis for the supervision of the management department and the quality control of manufacturer.
