中文摘要: 二十二碳六烯酸(Docose Hexaenoie Acid,DHA)具有提高记忆与思维能力、改善视力等生理作用,但其不饱和 度高,易腐败,稳定度差,目前多数采用喷雾干燥将其微胶囊化。但要获得高质量 DHA 藻油微胶囊,需要首先制备高 稳定度、高包埋率的 DHA 乳状液。为此,需要优化高稳定度 DHA 藻油乳状液的制备条件,试验结果表明,最佳复合壁 材为大豆分离蛋白加麦芽糊精;最佳乳化剂为蔗糖脂肪酸酯加单硬脂酸甘油酯(质量配比为 7 ∶ 3),最佳乳化剂添加 量为 2.0 %,最佳剪切乳化时间为 7 min,最佳乳化温度为 85 ℃。在此条件下乳化液稳定度保持在 95.6 %以上。

Abstract:Docose Hexaenoie Acid(DHA)can improve ability of memory and thinking. But it was highly unsat- urated, easy to corrupt and poor stability, so microencapsulation was the best way to preserve DHA by spray drying, at present. It was necessary to prepare DHA emulsion with high stability and high embedding rate,in or- der to obtain high quality microcapsules of algal oil DHA. The related experiments was carried out. The results showed that the optimized process conditions were soy protein isolate and maltodextrin as the composite wall ma- terial, sucrose fatty acid ester and monostearate glycerol(quality ratio of 7 ∶ 3) as emulsifier, emulsifier content 2 %,emulsification time 7 minutes, emulsification temperature 85 ℃.Under this condition, the emulsion stabil- ity of DHA microcapsule was kept above 95.6 %.
