中文摘要: 类胡萝卜素是一种天然色素,具有抗氧化、抗癌、预防衰老等多种生理功能,广泛应用于食品、医学、保健、化妆 品等各个领域。超声辅助提取方法具有节能、省时、高效的优点,越来越受到人们的关注。综合国内外相关文献,对超声 辅助提取类胡萝卜素的传质机理进行解释, 同时针对超声辅助类胡萝卜素提取方面的应用及研究进展进行阐述分析, 并对未来超声提取技术应用于工业提出展望,以期为超声辅助提取类胡萝卜素领域的科研工作提供参考。

Abstract:Carotenoids are natural pigments with a variety of bioactivities of anti-oxidation, anti-cancer, pre- vent senility, widely used in food, medicine, health care, cosmetics and other fields. The method of ultra- sound-assisted extraction with a series of advantages such as energy saving, time-saving and high efficiency, has received substantial attention. In current work, combined with the related literature domestic and foreign, the mass transfer mechanism of ultrasound-assisted extraction of carotenoids was explained. The applications and developments of ultrasound -assisted extraction technology in extracting carotenoids were investigated in present paper as well. Meanwhile, in order to provide references for the researches of ultrasound-assisted ex- traction of carotenoids, the prospect of ultrasonic extraction technology for industrial field in the future was also presented.
