中文摘要: 采用国家标准规定的检测方法,对豆渣中的营养成分进行检测,并对其含量声称进行分析。结果表明:豆渣中 营养成分丰富,富含蛋白质、膳食纤维、钾、钙、磷,是维生素 B1、锌和铜的来源。豆渣符合“高蛋白”、“高膳食纤维”、“高 钾”、“高钙”、“高磷”、“低糖”、“极低钠”等含量声称,但不符合“低热量”、“低脂肪”的含量声称。

Abstract:The nutrients in okara were determinated by standard test methods and those content claim were an- alyzed. The results showed that okaraholdedmany nutrients. It hada large content of proteins, dietary fiber,potassium, calcium, phosphorus and contained thiamine, zinc and copper. The content claim of okara were high proteins, high dietary fiber, high potassium, high calcium, high phosphorus, low carbohydrates, very low sodium, but not low calorie and low fat.
