大球盖菇不同部位氨基酸含量测定及营养评价

中文摘要: 采用氨基酸分析仪测定大球盖菇不同部位的各种氨基酸含量,应用氨基酸模式谱法和氨基酸比值系数法等对 其进行营养价值评价。研究结果显示:大球盖菇含有缬氨酸、谷氨酸、天冬氨酸、蛋氨酸、苯丙氨酸、亮氨酸和苏氨酸等 18种氨基酸,大球盖菇菇盖和菇柄中总氨基酸百分含量分别为 17.51 %和 6.67 %,包含了人体所需的 8 种必需氨基酸。 菇盖和菇柄中蛋白质相对于鸡蛋蛋白(标准蛋白)的贴近度分别为 0.584 2 和 0.426 7,大球盖菇不同部位的第一限制性 氨基酸是亮氨酸,氨基酸比值系数分别为 71.38 和 36.33。营养价值评价结果显示,菇盖和菇柄的 E/(E+N)分别为 0.41 和0.46,E/N 分别为 0.69 与 0.85,与 FAO/WHO 提出的参考蛋白质模式相接近。表明大球盖菇在医药学和营养学方面都具 有很高的价值,是一种值得大力开发利用的资源。
Abstract:The content of amino acids in different parts of Stropharia rugoso-annulata was analyzed in this pa- per. Amino acids pattern spectrum method and amino acid ratio coefficient method were used to evaluate the nutrition. The results showed that Stropharia rugoso-annulata include 18 amino acids, which were valine, glu-tamic acid, aspartic acid, methionine, phenylalanine, leucine and threonine, and so on. The percentage of to- tal amino acid contents in Stropharia mushroom cap and mushroom stem were 17.51 % and 6.67 %, respective- ly, which contained the human body needs 8 essential amino acids. The protein content in Stropharia mushroom cap and mushroom stem was close to the egg protein (protein standard), the close degree were 0.584 2 and 0.426 7, respectively. The first limiting amino acids is leucine and the amino acid ratio coefficient were 71.38 and 36.33 in Stropharia mushroom cap and mushroom stem, respectively. Nutritional value evaluation showed and that mushroom cap E/(E+N) and E/N in Stropharia mushroom cap and mushroom stem were 0.41 and 0.46, 0.69 and 0.85, respectively, which is close to the FAO/WHO reference protein pattern. All of the results showed that Stropharia has high value in medicine and nutrition science, whichis a worthy and vigorously develop resources.
