中文摘要: 对比分析了五指山茶树花花朵、花蕾与茶叶中的功能性成分茶多酚、粗多糖、总黄酮、总皂甙、超氧化物歧化 酶、游离氨基酸含量差异, 茶树花盛开花朵和花蕾中总黄酮和总皂甙含量高于茶叶,总黄酮含量分别为 1 230 mg/100 g 和 1 130 mg/100 g,总皂甙含量分别为 0.629 g/100 g 和 0.761 g /100 g;茶树花中茶多酚、粗多糖、游离氨基酸低于茶叶,茶 多酚含量分别为 6.2 g/100 g 和 5 g/100 g,粗多糖含量分别为 1.63 g/100 g 和 1.15 g/100 g,游离氨基酸含量分别为 7 g/100 g 和 11 g/100 g,而茶树花中检测到的超氧化物歧化酶含量远低于茶叶。

Abstract:This paper analysised the difference of tea polyphenols, crude polysaccharide, total flavonoids and total saponins, superoxide dismutase(sod), free amino acid In the Wuzhishan tea plant blooming flower, flow- er buds and tea. The content of total flavonoids and total saponins in blooming flowers and flower buds than that in tea. Flavonoids content in blooming flowers and flower buds were respectively 1 230 mg/100 g and 1 130 mg/ 100 g, the content of total saponins were respectively 0.629 g/100 g and 0.761 g/100 g. Tea polyphenols, crude polysaccharide, free amino acid in tea plant flowers is lower than the tea. Tea polyphenols content were respec tively 6.2 g/100 g and 5 g/100 g, crude polysaccharide content were respectively 1.63 g/100 g and 1.15 g/100 g, free amino acid content were respectively 7 g/100 g and 11 g/100 g. The superoxide dismutase (sod) content in tea plant flower is far lower than the tea.
