中文摘要: 硫代葡萄糖苷(简称硫苷)是西兰花中一类重要次生代谢产物,其在内源黑芥子酶的作用下水解生成多种活性 物质。硫苷及其降解物具有抗癌、抗氧化、抗菌等多种活性功能,已引起研究者们广泛关注。该文概述了硫代葡萄糖苷的 结构性质、合成降解途径,综述了硫苷的分离检测技术和生理功能等相关研究进展,为硫苷类物质的合理开发与利用提 供参考。
Abstract:Glucosinolates(GLs), an important kind of secondary metabolite in broccoli, can be hydrolyzed into several bioactive components through endogenous myrosinase. GLs and their degradation products play an im- portant role in anti-cancer, anti-oxidation and anti-microbial, which have drawed a great deal of attention of reasearchers. In this paper, the strucultural propertites, synthesis and degradation pathway of GLs were summa- rized, the seperation and detection technologies, physiological function of GLs were reviewed.which benefits for rational exploitation and utilization of GLs. This may provide a scientific basis reference for further studies con- cerning rational explorations and utilizations of GLs.
