中文摘要: 研究不同浓度配比的壳聚糖复合涂膜液涂膜处理,对采后杏鲍菇贮藏品质的影响。通过对杏鲍菇的腐败时间、 失重率、呼吸强度、多酚氧化酶活性(PPO)这四种指标进行测定,结果表明:壳聚糖浓度为 2.0 g/L、乙酸浓度为 1.5 %、乳 酸链球菌素浓度为 0.4 g/kg 时,可有效地延长杏鲍菇的货架期 7 天。该法不仅表现出比较明显的抑制腐败的效果,还使 杏鲍菇出现延迟褐变和减缓水分蒸发的现象。

Abstract:Storage quality of Pleurotus Eryngii was influenced by composite chitosan coating fluid in different concentration.With the time of decomposition, weight loss ratio, respiration rate and polyphenol oxidase as in- dexes, the results indicated that when the concentration of chitosan was 2.0 g/L, the concentration of ethanol was 1.5 % and the concentration of nisin was 0.4 g/kg, shelf-life of Pleurotus Eryngii could be extended for 7 days. By his method, Pleurotus Eryngii spoilage was inhibited, its browning was delayed and evaporation was slowed down.
