中文摘要: 对目前我国旅游区食品安全的现状和存在的主要问题进行分析说明, 引发食品问题的原因包括微生物污 染、化学物质、物理性原因以及过敏原类物质。解析了食品安全控制技术的现状,结合危害分析原理,提出利用危害分 析和关键控制点系统能够有效提高旅游区食品安全。 最后探究了未来全面推进食品安全控制技术的可行性对策 及建议。

Abstract:The present status of the tourist area food safety in China and the main problems were analyzed. The causes of food problems including microbial contamination, chemical, physical and allergens were discussed. The work also analysed the present situation of food safety control technology, combined with the principle of hazard analysis. The use of hazard analysis and critical control points system can effectively improve the tourist area of food safety. Finally, the future promoting food safety control technology and the feasibility of counter- measures and suggestions were proposed.
