中文摘要: 食源性致病菌是危害食品安全的重要因素,对人类健康造成了巨大的危害,越来越受到世界范围的广泛关注,因此建立简单高效的检测方法是食品卫生安全检测中的重要组成部分。适配体(Aptamer)是一段寡核苷酸序列,通过指数富集配体的系统进化技术(Systematic evolution of ligands by exponential enrichment,SELEX)从构建的随机文库中筛选得到。适配体对靶物质具有高度亲和力与选择性,多种用于食品中致病菌检测的适配体已被成功筛选和应用。介绍了基于适配体的食源性致病菌检测方法,讨论了适配体的发展及应用前景。
Abstract:Food-borne pathogenic bacteria is the main factors that endanger food safety and it has done great harm to human health,which has received more and more widespread attention.So establishing simple and efficient detection methods is an important part of food hygiene and security detection.Aptamers are single-stranded oligonucleotides that bind to target molecules with high affinity and specificity,which are selected by SELEX from a synthetic random ssDNA pool.A variety of aptamers for the detection of food-borne pathogenic bacteria have been successfully screened out and applied.This paper will introduce detection methods of food-borne pathogenic bacteria baesd on aptamers and discuss its application process and development prospect.
