Abstract:The source and the distribution,the difference,industrial application and production method of βgalactosidase were introduced.Using lactobacillus as example,the paper also expounds the type of β-galactosidase in different lactobacillus,gene cloning and related expression system from lactobacillus,and the method of β-galactosidase production by lactobacillus as well as the prospects for development.
