中文摘要: 以马铃薯淀粉和玉米淀粉为原料,机械活化10 h后,在最佳酯化反应条件下制备不同种类的辛烯基琥珀酸淀粉酯,采用分光光度计、旋转粘度计等对经机械活化并酯化后的淀粉进行了测定和研究,并将制得的辛烯基琥珀酸淀粉酯的物化性质与相应的天然淀粉、机械活化淀粉的物化特性进行比较,结果表明:玉米淀粉和马铃薯淀粉经过机械活化后,其透光度、溶解度和抗凝沉性增大,黏度减小;天然玉米淀粉或机械活化10 h玉米淀粉经OSA酯化改性后,其糊透明度、抗凝沉性、黏度均有所提高,除机械活化10 h淀粉(包括玉米淀粉和马铃薯淀粉)经OSA改性后溶解度有所减小以外;除了天然马铃薯淀粉经过OSA改性后黏度减小,其它物化特性变化与玉米淀粉相同;8种淀粉糊均表现出假塑性流体的特点。
Abstract:Potato starch and corn starch were used as materials and mechanically activated for 10 h.Then the different kinds of mechanically activated starches were modified by octenyl succinic acid(OSA)under the optimum esterification condition.The properties of OSA-mechanically activated starch were determined and studied by spectrophotometer,rotational viscosimeter and so on.After comparing the physicochemical properties of OSA-starch from mechanical activation,corresponding original starch and mechanically activated starch,the result indicated that:when corn starch and potato starch were modified by OSA,the transparency,the solubility and anti-retrogradation increased and the viscosity had a drop.Native corn starch or mechanically activated corn starch for 10 h had an increasing of transparency,solubility and viscosity except for a decreasing of solubility of mechanically activated starch for 10 h after modified by OSA.The change regulation of physicochemical properties of potato starch were similar as those of corn starch except for a decreasing of viscosity of native potato starch after modified by OSA.Eight kinds of starch paste were characterized by pseudo plastic fluid.
