Abstract:Our country is rich in fruitand vegetables，butthey are noteasy stored.Deep processing offruits and vegetables is beneficial to increase the added value，and reduce the loss rate of fruit and vegetable resources. The classification of the fruitand vegetable juice drinks and their nutritional value were reviewed in this paper. The processing technology of composite beverage of fruit and vegetable juice was also discussed，through the analysis offruitand vegetable juice beverage in the world and its prospects ofdevelopmentprocess.
