Abstract:Due to the widely application of carrageenan in food industry,as a food additive,the quality and safety of carrageenandirectly related to food quality and safety.This paper mainly for carrageenan production process,determine the critical control points,and to develop detailed HACCP plan,to eliminate potential safety problems,then to minimize the harm degree,in order to ensure the quality and safety of the production of carrageenan.
