中文摘要: 为检验电子舌在茶饮料应用分析方面的能力,应用法国AlphaM.O.S.公司生产的传感器型电子舌对中国市场上已有的51种茶饮料进行检测,所得数据结合判别分析法和回归分析法进行分析。研究结果表明,电子舌结合判别分析法可以较好地将不同茶类(红茶、绿茶、乌龙茶)、pH值(pH<4.0、pH4~6、pH>6.0)、糖度(含糖、无糖)、咖啡因含量(caffeine <30 mg/L、30 mg/L~70 mg/L、>70 mg/L)进行分类;电子舌结合回归分析法可以较好地建立茶多酚等风味化学成分的回归方程式。采用次年茶饮料样品对判别模型进行验证,验证结果表明准确率相对较高,说明该判别模型判别效果较好。

Abstract:The study was aimed to detect the application of the electronic tongue on tea beverage.51 kinds of tea beverage which was sold in Chinese market were detected by electronic tongue which was based on potentiometric chemical sensors developed by Alpha M.O.S.(Toulouse,France).All data were treated by multivariate data processing based on discriminant function analysis(DFA)and regression analysis(RA).The results showed that,much difference in the chemical components contents was found in tea beverages,but the flavors were relatively consistent.The different varieties(green tea,black tea,and oolong tea beverages),pH(pH<4.0,pH 4-6,pH>6.0),sugar content(no-sugar and sugary beverages),and caffeine contents(caffeine <30 mg/L,30 mg/L-70 mg/L,>70 mg/L)could be well discriminated by the electronic tongue with DFA.Regression equation of polyphenols contents in tea beverages could be established by the electronic tongue with RA.The tea beverages samples from next year were used for modelling verification,and the result showed high accuracy which indicated that the discriminant model had good effect.
