中文摘要: 为了更好地认识普洱晒红茶,为普洱晒红茶的研究提供科学的理论基础,分析普洱晒红茶的主要品质化学成 分,并对茶叶中氨基酸及矿质元素进行营养评价。结果表明,普洱晒红茶主要品质化学成分游离氨基酸总量、茶氨酸、水 浸出物、咖啡碱、茶多酚、茶黄素、茶红素、茶褐素均值分别为 2.6 %、0.47 %、36.8 %、3.4 %、0.09 %、2.43 %,变异系数均小 于 15 %,其中儿茶素总量为 0.46 %,酯型儿茶素占总儿茶素比的均值为 78.5 %;普洱晒红茶中含有 17 种氨基酸,氨基 酸总量为 8.016 %,其中必需氨基酸总量、鲜味氨基酸总量和药效氨基酸总量分别为 2.071 %、3.922 %和 5.216 %,氨基酸 比值系数分为 46.66;8 种矿质元素平均含量的由高到低的顺序是 K>Ca>Mg>Mn>Fe>Na>Zn>Cu,除 Na 的 INQ 值小于 1外,其余矿质元素的 INQ 值均大于 1。
Abstract:In order to know Pu'er sun-dried black tea and provide the theoretical basis of scientific for Pu'er sun -dried black tea research. The main quality chemical compositions of Pu'er sun -dried black teas were analyzed and evaluated nutrition value of amino acids and mineral elements in teas. The results showed that the average contents of total free amino acid, theanine, water extract, caffeine, tea polyphenols (TP), theaflavin (TF), thearubigins (TR) and theabrownine (TB) were 2.6 %, 0.47 %, 36.8 %, 3.4 %, 0.09 % and 2.43 % respectively, and their variable coefficients were less than 15 %, among them, the total catechin content was 0.46 %, and the average ration of ester-catechin contents to total catechins content was 78.5 %. All tea samples included 17 amino acids; the total amount of amino acids were 8.016 %, among them, the content of essential amino acids, taste amino acids and medicinal amino acids were 2.071 %, 3.922 % and 5.216 % respectively, and the SRC was 46.66. The content of 8 mineral elements in tea samples were K>Ca>Mg>Mn>Fe>Na>Zn>Cu, the INQ values of all mineral elements were exceeded 1, but the INQ of Na was less than 1.
