中文摘要: 黄精作为一种典型“药食同源”资源,富含多糖、皂苷及黄酮等多种活性成分,但天然活性成分普遍存在分子量大、溶解性差及生物利用度低、刺激性较强等问题,限制其深加工与产品开发。生物发酵技术凭借其条件温和、转化效率高及环境友好等优势,成为解决上述问题的有效途径。该文综述黄精的主要功能性成分,系统分析液体发酵、固体发酵及复合发酵3种技术模式的特点,重点探讨乳酸菌、酵母菌及复合菌系等核心发酵菌株的代谢机制,阐述发酵对黄精多糖的降解与修饰、对皂苷成分的生物转化与减毒增效以及对黄酮、γ-氨基丁酸等其他活性成分的协同增效作用,旨在为黄精资源的精深加工及高值化利用提供参考。
Abstract:Polygonatum,a typical resource with medicinal-food homology,is rich in various bioactive components such as polysaccharides,saponins,and flavonoids. However,natural bioactive components generally suffer from issues such as high molecular weight,poor solubility,low bioavailability,and strong irritation,which limit their processing and product development. Microbial fermentation technology has become an effective pathway to address these problems owing to its mild conditions,high conversion efficiency,and environmental friendliness. This paper reviews the major functional components of Polygonatum and systematically analyzes the characteristics of three technical modes:liquid fermentation,solid-state fermentation,and composite fermentation. It focuses on the metabolic mechanisms of core fermentation strains,including lactic acid bacteria,yeast,and complex microbial systems. Furthermore,this review elaborates on the degradation and modification of Polygonatum polysaccharides by fermentation,biotransformation,and toxicity-attenuating and efficacy-enhancing effects on saponins,as well as the synergistic effects on other active ingredients,such as flavonoids and γ-aminobutyric acid (GABA). This review aims to provide a theoretical reference for the deep processing and high-value utilization of Polygonatum spp. resources.
