绿茶凝胶软糖配方工艺优化及其品质分析

中文摘要: 为响应中国茶叶市场持续增长和茶饮便利性的需求,该研究以绿茶、明胶、变性淀粉、柠檬酸为原料,开发一款兼具良好口感和潜在抗氧化活性的绿茶凝胶软糖。以感官评分、质构特性和色差为评价指标,考察茶浓度、变性淀粉添加量、明胶添加量及柠檬酸添加量对产品品质的影响。单因素试验结果表明:茶浓度为3%、变性淀粉添加量为4%、明胶添加量为12%、柠檬酸添加量为0.3%时软糖感官评分较高。采用Design Expert 13.0软件进行响应面优化,得到最佳配方为茶浓度2.8%、变性淀粉添加量3.8%、明胶添加量12.4%、柠檬酸添加量0.3%,该条件下制得的绿茶凝胶软糖感官评分为87.6,DPPH自由基清除率为56.9%,羟基自由基清除率为38.5%,表明其具有一定的抗氧化活性。成品茶香浓郁、口感丰富、弹性与咀嚼性良好,且微生物及理化指标均符合国家标准。
Abstract:In response to the continuous growth of China's tea market and the demand for tea convenience,this study developed a green tea gel gummy with good taste and potential antioxidant activity using green tea,gelatin,modified starch,and citric acid as raw materials. The effects of tea concentration,modified starch addition,gelatin addition,and citric acid addition on product quality were investigated using sensory score,texture properties,and color difference as evaluation indicators. Single-factor experiments showed that sensory scores were higher when the tea concentration was 3%,modified starch addition was 4%,gelatin addition was 12%,and citric acid addition was 0.3%. Response surface methodology using Design Expert 13.0 software was then employed for further optimization. The optimal formula was determined as follows:tea concentration of 2.8%,modified starch addition of 3.8%,gelatin addition of 12.4%,and citric acid addition of 0.3%. Under these conditions,the green tea gel gummy achieved a sensory score of 87.6,with DPPH radical scavenging rate of56.9% and hydroxyl radical scavenging rate of 38.5%,indicating certain antioxidant activity. The final product exhibited a rich tea aroma,good taste,desirable elasticity and chewiness,and its microbiological and physicochemical indicators met the national standards.
