中文摘要: 为促进全谷燕麦米的消费,增加米饭营养和改善其营养构成,提供方便食品,该研究以脱皮率为9.82%、富含糊粉层的自制全谷燕麦米和市售大米为原料,探讨全谷燕麦米与大米混合米饭的浸泡条件、燕麦米占比、米水比对品质的影响,并采用质构分析、感官评价的方法确定最佳的燕麦米与大米混合米饭的蒸煮工艺,进一步研究泡打粉添加量、蒸煮温度、冷冻温度对冻干速食混合米饭加工品质的影响,并对制备的方便米饭复水特性与感官品质进行评价分析,研究其风味和营养品质变化。结果表明,当浸泡温度25~40 ℃、浸泡时间20~30 min、燕麦米占比30%(质量分数)、米水比1∶1.5~1∶2.0(g/mL)、蒸煮时间22min时,此工艺蒸煮制成的混合米饭品质佳,口感好,利于消化吸收。0.5%泡打粉、120 ℃蒸煮、-20 ℃冷冻条件下,复水性能最佳,能最好地改善燕麦和大米的微观结构。与新鲜混合米饭和商品速食米饭相比,冻干速食混合米饭具有丰富的营养与芳香成分。
Abstract:To promote the consumption of whole-grain oat rice,enrich the nutritional content of rice,improve its nutritional composition,and provide convenient food,this study used self-made whole-grain oat rice with 9.82% dehulling rate and rich in aleuron layer and commercial rice as raw materials. The effects of soaking conditions,oat rice proportion,and rice-water ratio on the quality of composite rice were studied. The optimal steaming process for composite rice was determined by texture analysis and sensory evaluation. The effects of baking powder addition,steaming temperature,and freezing temperature on the processing quality of freezedried instant mixed rice were further studied. The rehydration characteristics and sensory quality of the prepared convenient rice were evaluated,and the changes of its flavor and nutritional quality were analyzed. The results showed that the composite rice prepared under the conditions of soaking temperature 25-40 ℃,soaking time 20-30 min,oat proportion 30%(mass fraction),rice-water ratio 1∶1.5-1∶2.0(g/mL),and steaming time 22 min had good quality,good taste and was conducive to digestion and absorption. Under the conditions of 0.5% baking powder addition,120 ℃ steaming,and freezing at -20 ℃,the rehydration performance was the best,which could optimally change the microstructure of oat rice and rice. Compared with fresh mixed rice and commercial instant rice,the freeze-dried instant mixed rice had richer nutrition and aromatic components.
