L-半胱氨酸和氯化钙协同处理对冻干苹果脆片品质的影响

中文摘要: 为明确L-半胱氨酸与氯化钙协同处理对真空冻干苹果脆片品质的影响,以富士苹果为原料,考察其对苹果色泽、营养成分、质构、抗氧化能力、含水量、复水比和香气成分等指标的影响。结果表明:与对照相比,L-半胱氨酸与氯化钙协同处理可显著改善苹果脆片色泽,使L*值提高4.8%,a*值和b*值分别降低201.0%和29.8%,有效抑制冻干苹果片的褐变;感官评分提高26.7%,可滴定酸和抗坏血酸含量分别增加0.7%和40.0%;协同处理后冻干苹果脆片硬度和脆度分别提升了44.6%和50.8%,有助于保持脆片水分,降低水分流动性,维持较好的细胞结构,并使复水比提高20.4%。协同处理将脆片总酚含量提高101.0%,绿原酸和表儿茶素含量分别提升66.0%和83.8%,DPPH自由基清除率和ABTS+自由基清除率分别提高20.6%和5.0%。同时,协同处理后脆片中芳香类化合物含量也有所提高。

Abstract:To elucidate the effects of synergistic treatment with L-cysteine and calcium chloride on the quality of vacuum freeze-dried apple chips,Fuji apples were used as raw material. The color,nutritional components,texture,antioxidant capacity,water content,rehydration ratio,and aromatic components of the apple chips were evaluated after treatment. The results showed that,compared with the control,the synergistic treatment significantly improved the color of apple chips:the L*value increased by 4.8%,while a*and b*values decreased by 201.0% and 29.8%,respectively,effectively inhibiting browning. The sensory score increased by 26.7%,and the titratable acidity and ascorbic acid content increased by 0.7% and 40.0%,respectively. The hardness and crispness of the treated chips were 44.6% and 50.8% higher than those of the control,respectively. The treatment also helped retain moisture,reduced water mobility,better preserved the cellular structure,and increased the rehydration ratio by 20.4%. Moreover,the total phenolic content increased by 101.0%,with chlorogenic acid and epicatechin increasing by 66.0% and 83.8%,respectively. The DPPH and ABTS+radical scavenging activities increased by 20.6% and 5.0%,respectively. Additionally,the content of aromatic compounds was also enhanced after the synergistic treatment.
