中文摘要: 鲭鱼是富含多不饱和脂肪酸和血红素的低值经济鱼类,加工贮藏中易发生脂质氧化,导致鱼肉色泽、质构及风味发生劣变。针对其冷藏易劣变、预制品质不稳定等问题,该研究比较烤制、低温慢煮与油炸3种热加工工艺对鲭鱼出品率、质构、感官及冷藏期间品质的变化。结果表明,低温慢煮显著提高鲭鱼出品率;油炸鲭鱼硬度高于其他两种工艺。3种热加工工艺鲭鱼的感官评分存在一定差异,均呈现相应的工艺优势,可满足不同的感官偏好与消费需求。在冷藏过程中,三者的亮度值(L*值)与水分含量呈上升趋势;烤制与低温慢煮鲭鱼pH值均为先降低后升高趋势,低温慢煮鲭鱼的硬度与pH值趋势相同,烤制鲭鱼的硬度与pH值趋势相反,油炸鲭鱼的硬度与pH值在冷藏期间均下降。
Abstract:Mackerel is a low-cost and economically valuable fish that is rich in polyunsaturated fatty acids and heme. During processing and storage,it is prone to lipid oxidation,resulting in deterioration of the color,texture,and flavor of the fish meat. To address the issues of rapid deterioration during refrigeration and unstable pre-pre pared quality of mackerel,this study compared the effects of three thermal processing methods,namely roasting,low-temperature slow cooking,and frying,on the yield,texture,sensory properties,and quality changes of mackerel during refrigeration. The results showed that low-temperature slow cooking significantly increased the yield of mackerel;the hardness of fried mackerel was higher than that of the other two methods. There were certain differences in the sensory scores of mackerel produced by the three thermal processing methods,and each method demonstrated its corresponding advantages,which could meet different sensory preferences and consumption demands. During refrigeration,the L*values (brightness values) and moisture contents of the three methods showed an upward trend;the pH values of roasted and low-temperature slow-cooked mackerel showed a trend of first decreasing and then increasing. The hardness of low-temperature slow-cooked mackerel followed the same trend as its pH values,while the hardness of roasted mackerel showed an opposite trend to its pH values. The hardness and pH values of fried mackerel both decreased during refrigeration.
