中文摘要: 桑葚是一种药食同源水果,因其富含白藜芦醇、花青素等活性成分,在抗氧化领域展现出显著的应用潜力。该文综述近年来桑葚的抗氧化活性成分提取工艺的主要研究成果,归纳超声波、微波、超临界流体萃取、超高压萃取、低共熔溶剂法等辅助提取桑葚活性物质的方法和工艺条件,以期为桑葚在抗氧化领域的综合应用提供参考。

Abstract:Mulberries are fruit with both medicinal and edible values. Due to their rich content of resveratrol,anthocyanins,and other active components,they have demonstrated significant potential for antioxidant applications. This study provided a review of recent advances in the extraction technology for antioxidant components from mulberries,further summarized the methods and processing conditions including ultrasonic-assisted extraction,microwave-assisted extraction,supercritical fluid extraction,ultra-high pressure extraction,and lowmelting point solvent extraction. The aim is to provide references for the comprehensive utilization of mulberries in antioxidant-related fields.
