中文摘要: 为探明4 种主要果形草果中挥发性香气化合物的差异性,以怒江州福贡县4 种果形的草果果实为原料,采用顶空固相微萃取气相色谱质谱联用技术分析4 种果形草果的挥发性香气化合物,结合主成分分析、偏最小二乘法判别分析方法对4 种果形草果进行多元统计分析,筛选关键挥发性香气成分。结果表明,4 种果形草果果实样品中挥发性香气化合物种类及相对含量存在一定差异,4 种果形草果中共检测出30 种挥发性香气化合物,球形草果中检出25 种、纺锤形草果中检出24 种、椭圆形草果中检出23 种、卵形草果中检出26 种。其中共有挥发性化合物18 种,包括反式-2-癸烯醛、桉叶油醇、柠檬醛、顺式-柠檬醛、α-松油醇等,非共有的挥发性化合物有12 种,包括芳樟醇、香叶醇、反式-橙花叔醇、辛醛、乙酸香叶酯、β-蒎烯等。通过多元统计分析,从4 种果形草果中挑选出变量投影重要性(variable importance for the projection,VIP)值>1的关键挥发性香气化合物13 种,主要包括反式-2-癸烯醛、香叶醇、芳樟醇、3-苯基-2-丁烯醛、α-松油醇、桉叶油醇、α-甲基肉桂醛等。
Abstract:In order to find out the differences of volatile aroma compounds in several main fruit shapes of Amomum tsaoko. The volatile aroma compounds of four main fruit shapes of Amomum tsaoko in Fugong County,Nujiang Prefecture were analyzed by head space-solid phase microextraction-gas chromatography-mass spectrometry. Combined with principal component analysis and partial least squares discriminant analysis,multivariate statistical analysis was carried out on the four main fruit shapes of Amomum tsaoko to screen the key volatile aroma components. The results showed that there were some differences in the types and relative contents of volatile aroma compounds in the four main fruit shapes of Amomum tsaoko. A total of 30 volatile aroma compounds were detected in the four main fruit shapes of Amomum tsaoko,25 were detected in the globular shape Amomum tsaoko,24 were detected in the spindle shape Amomum tsaoko,23 were detected in the elliptic shape Amomum tsaoko,and 26 were detected in the oval shape Amomum tsaoko. Among them,there were 18 common compounds,including trans-2-decenal,eucalyptol,citral,cis-citral,α-terpineol,etc.,and 12 non-common volatile compounds,including linalool,geraniol,trans-nerolidol,octanal,geranyl acetate,β-pinene,etc.Through multivariate statistical analysis,a total of 13 key volatile aroma compounds with variable importance for the projection value>1 were selected from four main fruit shapes of Amomum tsaoko,including trans-2-decenal,geraniol,linalool,3-phenyl-2-butenal,α-terpineol,eucalyptol,α-methylcinnamaldehyde and other volatile aroma compounds.
