中文摘要: 亚麻籽油富含α-亚麻酸与亚油酸,是植物源中Omega-3多不饱和脂肪酸最为重要的来源之一,具有丰富的营养价值和健康益处。然而,亚麻籽油的易氧化性限制了其实际应用。该文对近年来亚麻籽油稳态化领域中递送系统的应用研究进展进行综述,重点阐述亚麻籽油的营养价值、消化氧化机制以及乳液体系、微胶囊、脂质体及水凝胶珠等递送系统的优势与潜力,讨论各类递送系统在亚麻籽油包封与稳态保护中的应用前景,以期为功能性亚麻籽油递送体系的设计及稳态保护的研究提供理论支持与技术参考。

Abstract:Flaxseed oil is rich in α-linolenic acid and linoleic acid,making it one of the most important plantderived sources of omega-3 polyunsaturated fatty acids,with high nutritional value and health benefits. However,its susceptibility to oxidation limited its practical applications. This paper reviewed recent research progress on the application of delivery systems in the stabilization of flaxseed oil,focusing on the nutritional value of flaxseed oil,its digestion and oxidation mechanisms,as well as the advantages and potential of emulsion systems,microcapsules,liposomes and hydrogel beads. It also highlighted the application prospects of various delivery systems in the encapsulation and stabilization of flaxseed oil,providing theoretical support and technical references for the design of functional flaxseed oil delivery systems and research on their stabilization protection.
