中文摘要: 为探究发酵处理对桑葚果酱冻干粉品质特性及生物活性的影响,以新鲜桑葚为原料,对经酶解破除细胞壁后制备接种植物乳植杆菌的发酵型果酱冻干粉与未发酵型果酱冻干粉进行研究,系统比较了两组样品的感官评分、营养品质及抗氧化能力。结果表明,发酵型桑葚果酱冻干粉总酸含量为1.47%、总糖含量为485.15 mg/g、还原糖含量为292.52 mg/g、花色苷含量为3 122.56 μg/g、乳酸含量为20.89 μmol/g;羟基自由基清除率为36.06%,超氧阴离子产生速率为76.74 nmol/(g·min),铁离子还原抗氧化能力(ferric reducing antioxidant power,FRAP)为83.72 μmol Trolox/g;2,2'-联氨-双(3-乙基苯并噻唑啉-6-磺酸)二胺盐[2,2'-azino -bis(3-ethylbenzothiazoline -6-sulphonic acid)diammonium salt,ABTS]阳离子自由基清除率为15.49 μmol Trolox/g;1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基清除率为11.94 μmol Trolox/g,抗氧化能力与未发酵型相比虽略有下降,但仍保持较高水平。通过相关性分析对各指标的相关性进行评价,结果显示,总酸含量、还原糖含量、总酚含量、花色苷含量和FRAP抗氧化能力等指标相关性程度高。采用“果胶酶解-乳酸菌发酵-真空冷冻干燥”组合工艺制备桑葚果酱冻干粉可保留桑葚部分营养和活性成分,维持较高的抗氧化活性,所制得桑葚冻干粉果酱感官品质优良、便携耐贮,可为低糖、低添加型果酱深加工奠定理论基础。

Abstract:To investigate the effects of fermentation on the quality characteristics and biological activities of freeze-dried mulberry jam powder,a comparative study was conducted between fermented and non-fermented freeze-dried mulberry jam powder. Fermented jam was prepared using fresh mulberries as raw material,followed by enzymatic hydrolysis for cell wall disruption and inoculation with Lactobacillus plantarum. The sensory scores,nutritional quality,and antioxidant efficacy of both samples were systematically compared in this study. The results showed that,compared with the unfermented Freeze-Dried Mulberry Jam Powder,the fermented type exhibited total acid content of 1.47%,total sugar of485.15 mg/g,reducing sugar of292.52mg/g,anthocyanin content of 3 122.56 μg/g,lactic acid of 20.89 μmol/g,hydroxyl radical scavenging rate of 36.06%,superoxide anion production rate of 76.74 nmol/(g·min),and ferric reducing antioxidant power(FRAP) was 83.72 μmol Trolox/g,2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid)diammonium salt(ABTS) free radical scavenging capacity was 15.49 μmol Trolox/g,and 1,1-diphenyl-2-picrylhydrazyl(DPPH) free radical scavenging rate was 11.94 μmol Trolox/g respectively,they still maintained relatively high levels. Correlation analysis was performed to evaluate the relationships among various indicators. The results indicated high correlations among total acidity,reducing sugar,total phenolic content,anthocyanin,and FRAP antioxidant capacity. The combined process of'pectinase hydrolysis-Lactobacillus fermentation-vacuum freeze-drying' for preparing freeze-dried mulberry jam powder could preserve partial nutrients and active components of mulberries,maintain relatively high antioxidant activity,and produce Freeze-Dried Mulberry Jam Powder with excellent sensory quality,portability,and storage stability. This study provides a theoretical foundation for the deep processing of jams with low sugar and additives.
