中文摘要: 为研究热风干燥温度对南极磷虾品质的影响,将南极磷虾在不同温度(45、55、65、75、85 ℃)条件下进行热风干燥,以干燥后南极磷虾的复水率、游离氨基酸组成、总脂质含量、虾青素含量、脂肪酸组成、酸价、过氧化值、硫代巴比妥酸值为衡量指标,结合雷达图分析法综合评价不同热风干燥温度对南极磷虾品质的影响。结果显示:不同热风干燥温度处理对南极磷虾的品质影响显著(P<0.05),其中,采用55 ℃干燥处理的南极磷虾,其复水率最高;采用65 ℃干燥处理的南极磷虾,其虾青素含量最高、酸价和硫代巴比妥酸值最低;采用85 ℃干燥处理的南极磷虾,其游离氨基酸总量最高、过氧化值最低;各处理组间南极磷虾的总脂质含量和多不饱和脂肪酸含量无明显差异(P>0.05)。雷达图评价结果显示,南极磷虾热风干燥温度的优先顺序为65 ℃>85 ℃>45 ℃>55 ℃>75 ℃。综上,采用热风干燥方式对南极磷虾进行干制处理时,优先选择65 ℃作为干燥温度能够更好地保证产品品质。
Abstract:To investigate the effects of hot air drying temperatures on the quality of Antarctic krill (Euphausia superba),samples were subjected to hot air drying at different temperatures (45,55,65,75,85 ℃). The rehydration rate,free amino acid composition,total lipid content,astaxanthin content,fatty acid composition,acid value,peroxide value,and thiobarbituric acid value of the dried Antarctic krill were measured as evaluation indicators. A radar chart analysis was subsequently used to comprehensively assess the effects of different hot air drying temperatures on the quality attributes of Antarctic krill. The results showed that the different hot air drying temperature treatments significantly affected the quality of Antarctic krill (P<0.05). Specifically,Antarctic krill dried at55 ℃ showed the highest rehydration rate,while the Antarctic krill dried at 65 ℃ exhibited the highest astaxanthin content,along with the lowest acid value and thiobarbituric acid value. Moreover,Antarctic krill dried at 85 ℃ had the highest total free amino acid content and the lowest peroxide value. No significant differences were observed in the total lipid content and polyunsaturated fatty acid content among the treatment groups (P>0.05). The results of radar chart analysis indicated that the priority order of hot air drying temperatures for Antarctic krill was 65 ℃>85 ℃>45 ℃>55 ℃>75 ℃. In summary,when using hot air drying to process Antarctic krill,65 ℃ should be preferentially chosen as the drying temperature for ensuring better product quality.
