中文摘要: 为系统探究不同贮藏温度对稻谷食用品质的影响规律,将采收后稻谷分别于低温(15 ℃)、常温(25 ℃)、高温(35 ℃)下贮藏12个月,系统测定贮藏过程中稻谷水分含量、蛋白质结构、主要脂肪酸含量变化、蒸煮后质构特性及挥发性风味的动态变化,考察不同温度对稻谷贮藏过程中食用品质的影响。结果表明,随着贮藏时间的延长,稻谷均出现不同程度的水分流失、蛋白质结构劣变、脂肪酸氧化分解及陈化异味积累等品质劣变现象。其中,35 ℃高温条件下稻谷水分流失最为严重,高温加速了蛋白质二级结构由有序向无序转变以及蛋白质聚集,加剧了脂肪酸降解与风味劣化,稻谷弹性、黏聚性和咀嚼性整体下降,硬度升高;25 ℃常温贮藏可在一定程度上减缓氧化损伤,但仍难以长期保持稻谷食用品质的稳定性;相比之下,15 ℃低温贮藏抑制了脂质、蛋白质的氧化进程,减少陈化相关不良挥发性风味物质的生成与积累,延长了稻谷良好食用品质的保存期限。
Abstract:The effects of different storage temperatures on the edible quality of paddy rice were investigated.Post-harvest paddy was stored for 12 months at low temperature (15 ℃),room temperature (25 ℃),and high temperature (35 ℃). Changes in moisture content,protein structure,the contents of major fatty acid components,textural properties of cooked rice,and volatile flavour compounds were monitored during storage to evaluate the influence of temperature on paddy rice quality over time. The results showed that all paddy rice samples exhibited progressive quality deterioration during storage:moisture loss,protein structural changes,fatty acid oxidation,and accumulation of off-flavours. These deteriorative changes were most severe at 35 ℃,where moisture loss was severe. High temperature accelerated the transition of protein secondary structures from ordered to disordered states,promoted protein aggregation,and intensified fatty acid degradation and flavour deterioration. Consequently,the cooked rice exhibited reduced elasticity,cohesiveness,and chewiness,accompanied by increased hardness.Storage at 25 ℃ partially mitigated oxidative damage,but was insufficient to maintain the stability of paddy rice edible quality during long-term storage. In contrast,storage at 15 ℃ inhibited lipid and protein oxidation,suppressed the accumulation of storage-related off-flavour compounds,and preserved the edible quality of paddy rice.
