Abstract:During coffee processing，approximately 50% of processing residues，coffee pulp，are generated. Although rich in nutrients，coffee pulp has not been effectively utilized，resulting in resource waste and environmental pollution. In this paper，the current status of resource utilization of coffee pulp was reviewed，including composting，development of functional foods，wine production，animal feed application，mushroom cultivation，biogas production，and extraction of health-promoting compounds. Furthermore，future research prospects were discussed to provide references for the resource utilization of coffee pulp，aiming to facilitate the green transition of the coffee industry from a ′bean economy′ to a ′whole-fruit economy′.
