中文摘要: 浆水是我国西北地区历史悠久的传统发酵食品,具有独特风味及潜在健康价值。随着传统发酵食品现代化开发需求的提升,其科学研究与应用价值备受关注。该文主要对浆水的制作工艺、微生物多样性、益生菌功能及产品开发进行综述,梳理原料、发酵方式及纯菌接种、连续发酵等现代技术的应用现状;总结乳酸菌主导的核心菌群及已分离益生菌的功能特性,阐述益生菌通过调节肠道菌群、产生短链脂肪酸等方式,调控宿主糖脂代谢、肠屏障功能及免疫应答的机理,并对浆水产品开发现存问题及现代化转型方向进行展望,以期为其功能性食品创新与科学开发提供理论依据。

Abstract:Jiangshui is a traditional fermented food with a long history in Northwest China,featuring a unique flavor and potential health value. With the increasing demand for the modernization of traditional fermented foods,their scientific research and application values have attracted much attention. The production technology,microbial diversity,probiotic functions,and product development of Jiangshui were mainly reviewed. The application status of raw materials,fermentation methods,and modern technologies such as pure culture inoculation and continuous fermentation were summarized. The core microbial community dominated by lactic acid bacteria and the functional characteristics of isolated probiotics were summarized. The mechanisms by which probiotics regulated host′s glucose and lipid metabolism,intestinal barrier function,and immune response through modulating intestinal microbiota and producing short-chain fatty acids were elucidated. Finally,the existing problems in the development of Jiangshui products and the direction of modern transformation were discussed,aiming to provide a theoretical basis for the innovation and scientific development of functional foods.
